Jamaican Jerk Chicken Recipe

For those of you not familiar with a Jamaican Jerk like this Jamaican Jerk Chicken Recipe, it is a spicy, sweet, tangy and HOT meal for grilled meat, typically used for pork or chicken.  Looking for great fun recipes to add to our menu plan, this combination of flavors was top on my list.

After some research, I starting cooking it up in the kitchen in order to find a great “Jerk” recipe that the whole family would enjoy. Most recipes call for Scotch bonnet peppers. I wanted a little heat, but not a ton that my kids would completely back away from the table.  Instead of the much more powerful traditional peppers, in the seasoning mix, I incorporated cayenne pepper to turn up the heat a bit. You can certainly adjust this spice level up or down based on your family’s taste.

Start by mixing up a marinade for the jerk chicken in large bowl or dish. See the recipe seasoning blend below. I like to make my own I find it easier as I have most of these spices on hand only.

Jerk Chicken Seasoning Blend

  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon dried crushed red pepper
  • 1 teaspoon cayenne pepper
  • 2 teaspoons brown sugar
  • Pinch salt & pepper.


If you like this jerk chicken recipe as much as we did, you can easily double or triple this seasoning blend recipe and store it in an airtight container for up to two months.

I cheated and cooked my jerk chicken recipe on an indoor grill.  If you have limited space, live in an apartment without a grill, or the weather isn’t great fo grilling, you can use this method.  You could even broil the chicken in the oven if you preferred.  A traditional grilled method imparts a  better texture and smoky flavor, but it is still delicious when cooked in other ways.

The addition of fresh pineapple junks, bell peppers, and onions is ideal for serving over rice.  The caramelization on the grill adds tons of flavor!

It works perfectly for meal planning in advance and letting it marinade longer gives even more flavor!

Jamaican Jerk Chicken Recipe
Recipe type: Entee
  • 1lb boneless chicken breast, sliced
  • Half Fresh Pineapple, core removed & diced
  • 1 Red Onion, rough chopped
  • Bell Pepper (your color choice), rough chopped
  • 3 sprigs Green Onion, sliced thin
  • 1 cup orange juice, plus ¼ cup
  • Olive Oil
  • Rice or Noodles (optional)
  • Jerk Seasoning Blend as Noted in post content
  1. Slice the chicken, season with a pinch of salt & pepper.
  2. Add it to a bowl with 1 tablespoon Olive oil, a few pieces of the diced pineapple, half of the green onion and the orange juice.
  3. Cover with plastic and refrigerate for 15 minutes.
  4. Heat a grill pan or skillet over medium heat, drizzle the pan with olive oil. Add the chicken, saute for about 3 minutes.
  5. Add the onions, peppers and pineapple. Continue to saute for about 5 minutes. Reduce to low.
  6. Add the seasonings and the ¼ cup of orange juice. Mix well.
  7. Cover and simmer until chicken is cooked through.
  8. Eat as is or serve over rice. We have even added this to a soft tortilla!

How To Make Homemade Flubber Kids Craft

Flubber is an incredibly easy and gooby kids craft project that kids will love! Buying flubber from the store can be costly and I found that it doesn’t last long at all.  Coming up with a fun way to make this homemade flubber at home as a weekend kids craft was ideal!

Why will you love making this homemade flubber kids craft? 

  • It isn’t too messy
  • Kids love it because it is fun to play with
  • It’s a great educational kids craft and science experiment (is it solid or liquid?)
  • It can be personalized with colors and even glitter


Supplies Needed: 

Borax Detergent Booster

White Glue

Food Coloring

Directions to Make Homemade Flubber:

You will need two separate bowls to make each of the following mixes separately. No worries you will combining them later.

Mix one - Homemade flubber

Mix 1

3/4 Cup Warm Water

4 oz Multiple Purpose School Glue (standard size bottle)

Food Coloring (Your favorite coloring)

Mix all ingredients together until the mixture is well incorporated.  You can adjust the food coloring until you find the right shade.  It will lighten some when mixed with the second step, so don’t be afraid of going a bit darker.

Mix one - Colored - Homemade flubber

Mix 2

2 tsp.  Borax

1/2 Cup Warm water

Mix the above until Borax is fully dissolved.  This should take just a minute or so, and can be done with a spoon or wire whisk.

Add Mix 2 into Mix 1. To allow the kiddos to have fun, I had them stirring and mixing the ingredients together, but you really don’t need to do this part at all. It is a chemical reaction that makes flubber into a mass of goo.

Because of the science behind this recipe, the borax combines with the PVA in the glue and makes a polymer. Once the mixture looks soupy, roll up those sleeves and hand mix for a full 2-3 minutes and VIOLA.  You have been flubberized.  Please remember to tell your kids that homemade flubber is not a food and should not be tasted. 

To make sure your homemade flubber lasts longer, make sure your kids have clean hands before playing with it.  This will keep dirt and germs out of it, and make it last a lot longer for future days of play. The shelf life of the homemade flubber kids craft is around 3 weeks.  After that, you’ll want to throw it out and create a new batch to play with.  During the 3 weeks that you store the flubber, make sure to keep your flubber in an airtight container, or a Ziploc baggie.  You’ll also want to note that this should be thrown away in the garbage and not poured down the sink or down a drain.

Making kids craft ideas like this homemade flubber is a great way to include education into play time.  With so many fun colors you can make, it is also a fun craft idea that would work for any birthday party, or even a sleepover with the kids!  Add some drops of glow in the dark paint, and use it to decorate around Halloween!  The possibilities with this fun homemade flubber kids craft are endless!
