Ahhhh. The luck of the Irish will surely get you in the mood for making these delicious cake pops. And to those of us who arenโt even a teeny tiny bit Irish, we can still rock making these treats. This is one of the easiest recipes ever. You get to choose your favorite box cake brand and, after itโs baked, crumble the whole thing to get started. I chose a yellow cake mix.
They do take up some of your time and there is no workaround for that. Cake pops are generally known for being time-consuming. But I promise you they are worth all the effort. Plus, they are so fun to eat.

Ingredients Needed to Make These Green Cake Pops
- ยผ white cake (such as a box cake), baked
- 2 tbsp cream cheese frosting, soft
- 8 oz green candy melts
- 10-count 6โinch cookie sticks
- 10 gold coins
- 3 TBSP white sprinkles
How to Make St Patrick’s Day Cake Pops
Make your box cake according to its directions and let cool completely before moving on. Once your cake is cool, in a large bowl, take 1/4 the size of your baked cake and crumble it.
If you have little ones around, this is a great project for them. Making messes is their game. Next, add in your cream cheese frosting. Mix well with a hand mixer, spoon, or stand mixer. We sometimes just use our hands too.
Then divide your cake into 10 sections. With the palm of your hand, round out each portion into a ball shape. Then place your cake pops on a sheet pan or plate, and place them in the freezer for 15 minutes.
Quick Note:
It is okay to leave them in longer. In fact, I often make my cake balls ahead of time and leave them in for hours. (See also kitchen tips for more suggestions).
While your cake balls are in the freezer, place all of your candy melts in a medium-sized bowl. Microwave for 30-second intervals until completely melted. Remove the cake balls from the freezer.
Then, place your cake pop stick in the candy melt, and then the cake pops. Now you are ready to add your cake pop to the candy melts. Coat the pop completely with the melt. On the side of the bowl, tap it gently with the stick, removing any excess chocolate from the cake pop to create a smooth finish.
Place the cake pop on the parchment paper. Immediately add your sprinkles before the chocolate dries. In the corner of your cake pop, push in your gold coin.
Continue steps 6 through 8 until each cake pop is complete. This should not take too much time. Once you get your assembly line going, it will be smooth sailing.
Quick Kitchen Tips
- Dip the tip of your lollipop stick in a little of the melted candy coating before inserting it into the cake balls.
- Do not get any water in your melted chocolate โ water will make your chocolate clumpy.
- I like to use a coffee mug for my candy melts. It is deep, and the coverage is better.
- Donโt wait until the last minute to make your cake balls โ make them up ahead of time and freeze them! It is okay to keep them in the freezer longer than 15 minutes. It won’t hurt them. In fact, the longer the better.
- You can use a regular or gluten-free boxed cake or a homemade cake recipe with very similar results.
- The most important tip: ENJOY!! – May the luck of the Irish be on your side.
