Soft and fluffy Eggnog Pancakes will make a beautiful, bright, and sunny breakfast on cold winter days. These pancakes are made with eggnog right in the batter and spiced up with cinnamon and nutmeg.

During December, gingerbread, peppermint, and eggnog flavors are in abundance, with eggnog being my favorite. My secret is out. I absolutely love the flavor of eggnog. I love to cook and bake with it. And I have to admit I dislike drinking whole dairy eggnog. It is too thick in texture for me.
BUT I have discovered Almond Eggnog at my local Aldi grocery store. And this I can gobble up in a big glass or in my morning coffee. This recipe makes around 12 pancakes. Perfect for a family of four. Unless you have teenage boys. You may want to double the batch as needed. And these pancakes pair well with our Homemade Pancake Syrup.
In order to make these pancakes soft and fluffy, you will need a few common ingredients. It is no secret that a combination of baking powder, baking soda, and salt will create the fluffiest pancakes. These three ingredients complement each other by reacting with each other.

Ingredients Needed for Cinnamon Eggnog Pancakes
- 2 cups flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 teaspoon of cinnamon
- 2 eggs
- 1 teaspoon vanilla
- 2 tablespoons butter, melted
- 2 1/2 cups eggnog
- 1 cup of water, optional
You can use the flour of choice for these pancakes. If you need to make this recipe gluten-free, use a 1:1 all-purpose gluten-free flour.
How to Make the Best Eggnog Pancakes:
These Eggnog Pancakes can be made on a stove top or on a griddle. Personally, I prefer to make my pancakes on the griddle. I am all about time-saving hacks.
Making them on the stovetop takes more time. Keep in mind these pancakes are slightly sweeter than the traditional ones, but itโs not overpowering and tastes like a dream with a drizzle of maple syrup. Whoโs ready to make a batch of these eggnog pancakes?
Warm your skillet on medium-low heat or your griddle at 350 degrees. Then, in a medium bowl, mix together the eggs, vanilla, and butter.
Combining Ingredients
Add your dry ingredients: flour, baking powder, salt, cinnamon, and nutmeg. Mix well.
Slowly incorporate the egg nog. The batter should be thicker than the cake batter, but not too liquid. Donโt be tempted to add additional liquid. This will cause the pancakes to spread out and cook into thin discs.
Leave pancake batter to sit on the counter after itโs mixed to allow the ingredients to react. Let it sit for 10-15 minutes before cooking.
Spray your skillet with cooking spray. Using 1/4 cup, pour your pancake batter into the skillet. Let sit for about one to two minutes, or until small bubbles start to form.
Then flip and continue to cook the other side for an additional minute. A great way to check if your pancake is done is to touch the center to make sure itโs firm. (As a comparison, touch the center-right after you flip the pancake, and then touch in a couple of minutes.)
Repeat step 5 until you make all your pancakes. Serve with maple syrup, a homemade glaze, a dusting of powdered sugar, or as is!
Can You Make Eggnog Batter Ahead of Time?
If you want to prep this batter the night before, simply follow the recipe, refrigerate the pancake batter covered, and take it out for ten minutes to warm up to room temperature before using it.
You make also need to add a tablespoon more eggnog to loosen the batter up a bit. Consistency matters.
