The kids just got home, you just got home, and yet you have to head out to another sports event in a few hours. So what is for dinner? Gather round, my friend. I have some great news for you. We’ve got another favorite vegetarian dinner recipe that’s easy, quick to make, and completely customizable – yes, it’s one of those clean-out-the-veggie-drawer kinds of magic meals.
We all know what a challenge weeknight dinners can be!
Easy Weeknight Vegetable Stir Fry is a quick weeknight dinner for two or for your entire family. Make this healthy food recipe. Take the guesswork out of dinner. It is easy to make, and the only time needed for cooking this meal is the length of time it takes for the rice to cook.
If you need a much quicker version, pull out the minute rice you have in the pantry. This rice will certainly reduce your cooking time to half. Our favorite flavor/style is Jasmine rice. GUYS, SO GOOD!
You don’t need a lot of ingredients to pull a sumptuous meal together. I suggest having a bottle of high-quality soy sauce on hand. I do not purchase any from my grocery store, but rather from our local Asian food market. The taste is well worth the extra trip to the store.
Remember that dinner doesn’t have to always be a production.
Ingredients Needed for This Veggie Stir Fry
Please note that you can print the full list of ingredients as well as this great recipe below. As with most vegetable stir-fry recipes, you can mix and match the vegetables. Use up what you have on hand. This meal helps reduce food waste.
- 1 cup brown, jasmine rice, white rice, or your favorite type of rice
- 1 cup fresh or frozen broccoli
- 3 carrots
- 3 tbsp olive oil
- 1 tsp sesame oil
- 1 cup sweet corn
- ½ tsp garlic powder
- ½ tsp sea salt
- ¼ cup soy sauce
- 1 tbsp hoisin sauce
Optional – Protein
While the original recipe doesn’t call for a protein option, you can certainly add one in. Making it a more protein-packed dish.
- Grilled Chicken Breasts
- Sauteed Pork Strips
- Grass-Fed Beef Strips
What Other Vegetables Can I Use?
- Bok Choy (add these more delicate veggies at the end of cooking time)
- Strips of bell peppers (yellow, red, or orange)
- Scallions
- Onions
- Water Chestnuts
- Mushrooms
- Edamame
- Green Beans
- Shredded Cabbage
How to Make This Rice Stir Fry
STEP ONE: First step, start by boiling two cups of water. Stir in rice. Turn the heat down, cover, and simmer the rice for about 30 minutes. (See my quick meal tips below for some other ideas). Or follow the directions on the package of rice you have purchased. Cook time will vary.
STEP TWO: Meanwhile, Cut broccoli into bite-sized pieces.
STEP THREE: Next, peel and cut carrots into thin slices. Stir-fry broccoli and carrots in olive oil, sesame oil, and garlic powder for 4-5 minutes.
Please keep in mind that you can choose your veggies. You do not need the ones I have chosen for this recipe. ANY veggies will do and taste just as great. I like to cook up this recipe in a wok. The reason is that I end up using less oil than making this in a saute pan. However, I say use what you have on hand. No need to rush right out and make this purchase.
STEP FOUR: Next, it is time to stir in rice, salt, and corn.
STEP FIVE: Heat through. Lastly, add soy sauce and hoisin sauce to make a savory sauce. Then stir to combine. Then you are ready to serve this meal at the dinner table. Minimal effort and a healthy meal using leftover vegetables.

Quick Vegetable Stir Fry Tips
- Think about using frozen veggies vs fresh ones. Remember to use a variety of vegetables. Not only will it make for a more colorful stir-fry, but added in different flavors. Also, leftover vegetables work well too.
- Swap out regular cooked rice for Uncle Ben’s Ready Rice. Reduces your cooking time with minimal effort.
- Finally, any leftovers can be stored in an airtight container in the refrigerator for up to 5 days. This is a great meal option to eat multiple times during the week as part of your meal prep for the week.

This might sound like the stupidest question but do I boil the carrot pieces and broccoli before stir-frying them?
Hi LIV.. Not a silly question at all. I cut each piece small enough (at least for the carrots) & Broccoli to cook fast enough. I don’t boil at all. Just adding in all the veggies together to cook. If you are finding your veggies are not cooked to your liking just put a lid on the sauce pan and let set a few minutes. The heat & steam will cook it through. Hopes this help
