Coffee! It’s the best way to wake up in the morning. And…It’s that time of year! Which means refreshing afternoon pick-me-ups. So, when it’s hot outside and you need a caffeine boost to cool down, keep these 3-ingredient Coffee Latte Popsicles in your freezer to get you through the day.
Popsicles are one of our favorite treats. The best part of all, I can make the kids their own pops and this mom can get a much-needed caffeine buzz. We go through a lot of ice pops in the summer.
It’s a cup of home-brewed coffee in frozen form and makes roughly 10 pops.
Ingredients Needed
- 1/2 cup of ground strong coffee (See brew instructions below)
- 4 cups of water
- 1 1/4 cup of heavy cream
- 6 tablespoons of sugar

How to brew coffee to make a latte
The key to making these Coffee Latte Pops the best they can be is starting out with good coffee. Because there are so few ingredients in this recipe, everything needs to be high quality. Here are some helpful tips on getting the best from your coffee maker:
Start with fresh coffee grounds. Ideally, you want to buy freshly roasted whole beans and grind them yourself right before brewing. As soon as you grind coffee beans, they start to lose their oils and become stale.
Use the correct water to coffee ratio. This will vary depending on which method you use to make your coffee and how many cups you’re making at once. It’ll also vary depending on how strong you like your roast.
Coffee-to-Water Ratio – A general guideline is called the “Golden Ratio” – one to two tablespoons of ground coffee for every six ounces of water. This can be adjusted to suit individual taste preferences.
Brew time. In a drip system, the contact time should be approximately 5 minutes. If you are making your coffee using a French Press, the contact time should be 2-4 minutes.
If you’re not happy with the taste, you can make a few adjustments for next time.
- Too Strong – the brew time is too long
- Too Weak– the brew time is too short
Experiment with the contact time until you get the right balance for your taste.

How to Make Coffee Popsicles
STEP ONE: Start by brewing your coffee with ground coffee and water. Then add 5 tablespoons of sugar and 1/4 cup of heavy cream into the brewed coffee. Place coffee in the fridge to chill for 1-2 hours.
STEP TWO: Microwave the remaining cream for 30-45 seconds. You want the cream to be warm but not hot. Stir in the remaining sugar.
STEP THREE: Add 1 1/2 tablespoons to each slot in the popsicle mold. Divvy the remaining cream equally into the 10-slot popsicle mold.
STEP FOUR: Place mold in the freezer for 1-2 hours until the cream is frozen.
STEP FIVE: Once frozen, pour chilled coffee over the cream to fill each slot. Add the top and place the sticks in. Freeze for 4-6 hours or until frozen, but overnight for best results.
How long will iced coffee pops last in the freezer?
- They’ll last several days to a week. After that, the texture will deteriorate.
- You can keep them right in the mold.
- Or unmold them and stash each popsicle in a ziplock freezer bag.
