This Cranberry Turkey Flatbread Pizza is a superb choice for post-holiday leftovers.  Flatbreads are a wonderful vessel for a quick pizza or a fun sandwich, and there is nothing more satisfying than using your favorite holiday leftovers for this fast meal. You just may prefer this leftover recipe to the original roast turkey.

Leftover Turkey

Regardless of how much turkey you have left over, you still make this flatbread with a small batch of turkey. The flavor comes from the cranberry, the oven-roasted turkey, and melted cheese.

Consider it an open-faced turkey sandwich and you’ll be happy to be eating something other than a regular turkey sandwich post-Thanksgiving.

Let’s give your turkey a leftover makeover and turn it into a delicious and simple lunch or dinner. Not only is this Cranberry Turkey Flatbread Pizza delicious, but it is also super simple to make.

I am talking about the prep time of only a few minutes. Remember, you don’t have to settle for another boring turkey sandwich! Thanksgiving leftovers are the best, but another sandwich.

And really, who would want to with this simple recipe? It’s a great fun turkey leftovers option that will even get your kids excited about eating leftovers.

  • 2 flatbreads, or pizza dough
  • 1 cup turkey, roughly chopped
  • 1/2 cup cranberry sauce (ours was homemade)
  • 1 cup shredded cheese (we used Monterey Jack blend)

How to Make Cranberry Turkey Flatbread

Grab some quality flatbreads from the bread or deli area of your local grocery store.  You can also use Naan if traditional flatbread isn’t available.

For an extra twist, you can grab the garlic and herb-flavored instead of the classic sandwich. If you are on a restricted diet, you may even want to consider using some of the lightened versions that are 100 calories per flatbread.  

This recipe is definitely easy to adapt.

Instead of traditional sauce, we are using cranberry sauce 

Spread your favorite cranberry sauce on the flatbread as the “sauce” for your flatbread pizza. We make ours homemade, but any canned or jarred variety will work just fine.  

Be as generous as you like. The more the better, in my opinion, but if your kids aren’t big fans of cranberry sauce, spread just a bit to moisten the flatbread.

Top with your shredded or diced leftover turkey and shredded cheese. To spice it up a bit, you can use some pepper jack cheese. I love the spicy cheese with the sweet and tart cranberry sauce. A mix of cheddar, jack, or mozzarella are all great choices as well.

 I choose whatever I happen to have on hand.

These are the perfect size to cook in a toaster oven for a fast snack, or to make several and bake on your favorite pizza stone for a delicious flatbread pizza lunch everyone will beg for more of in the future.

Simply bake at 400 degrees for 10-12 minutes or until the cheese is melted, and the flatbread is golden.

Ingredients

  • 2 flatbreads
  • 1 cup turkey, roughly chopped
  • 1/2 cup cranberry sauce (ours was homemade)

Instructions

  1. Preheat the oven to 400
  2. Spread the cranberry sauce on each flatbread.
  3. Add the turkey and a pinch of salt & pepper to each.
  4. Top with shredded cheese, sprinkle evenly.
  5. Bake on 400 for 10-12 minutes or until cheese is melted and flatbread is golden.
  6. Serve hot or cold!
