This Soft Pretzel Dough is a perfect and easy snack to prepare. I love using it to make these Homemade Cinnamon Sticks for a quick snack or a tasty dessert! So easy, inexpensive, and perfect for everyone to enjoy.

Since this recipe is made without yeast, it will be without that yeasty taste and will not rise like real pretzel dough. This means these pretzel sticks will have a dense texture.

The key to this recipe is incorporating the best cinnamon type. It makes a world of difference in taste. You can enjoy this soft pretzel dough made with basic bread ingredients. Finish them off with a little cinnamon and sugar. You can opt out of the cinnamon and sugar and sprinkle with some kosher salt or dip in your favorite honey mustard sauce.

Ingredients Needed

This recipe will make between 24 and 28 pretzel sticks. It will depend on the size of your pretzel sticks.

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tsp baking powder
  • 2/3 cup milk (warmed)
  • 2 tablespoons vegetable oil
  • 1 egg – beaten
  • Melted butter
  • Cinnamon & Sugar (1 part cinnamon to 4 parts sugar)or in other words, 1 tsp cinnamon mix with 4 tsp sugar.

To Make them crispy

  • 5 cups water
  • 2 tablespoons baking soda

How To Make These Cinnamon Pretzels

STEP ONE: It is a pretty simple recipe. First, start by preheating your oven to 450 degrees. After this, prepare a baking sheet by either lining it with parchment paper or using a silicone mat. If using parchment paper, once lined lightly spray with cooking oil.

This will prevent sticking. From experience, even if lined, there may be a few that do not cooperate.

STEP TWO: Then combine all your dry ingredients in a large mixing bowl. Until well mixed. I like to use my hands for this part.

STEP THREE: Combine olive oil, beaten egg, and warm milk. Then add into dry ingredients and mix well.

STEP FOUR: The crumbly dough will come together with just a bit of kneading to form into a ball. Allow the ball of dough to rest for at least 10 minutes.

STEP FIVE: Form this dough into any shape you want. I like simple sticks for easy dipping and portions. So, I roll or pat out the dough into a loaf shape, then cut the sticks and roll them out. I typically cut them in 3-inch stripes.

Then place them on a silicone baking mat to prevent sticking in the oven!

Making Them Chewy

STEP SIX: This is an important step. This step will create a soft and chewy inside. You will not want to skip this step.

First, in a quart saucepan, boil 5 cups of water and add in 2 tablespoons of baking soda. Dip the rolled dough sticks into boiling water for 30 – 45 seconds. They will rise to the top when done.

Then, using a slotted spoon, remove and place on your greased or silicone mat-prepared baking sheet. Do not soak or keep each rolled pretzel stick in the mixture for longer than 30 seconds. If left to soak, your dough will break down and create a very sticky situation.

STEP SEVEN: Bake for 8 minutes at 450 degrees until golden brown.

STEP EIGHT: In a small bowl, melt butter. Then brush pretzels with melted butter, and sprinkle with cinnamon and sugar.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tsp baking powder
  • 2/3 cup milk (warmed)
  • 2 tablespoons vegetable oil
  • 1 egg - beaten
  • Butter - melted (for brushing)
  • Sugar & Cinnamon - 1 tsp cinnamon/4 tsp sugar combined
  • Cooking spray

To Make Pretzels Crispy

  • 2 tbsp baking soda
  • 5 cups of water

Instructions

  1. Preheat the oven to 450 degrees. Line a baking sheet with parchment paper or on a silicone mat. If using parchment paper, once lined spray lightly with cooking oil spray.
  2. In a medium-sized bowl, combine all dry ingredients until mixed well.
  3. In a measuring glass, combine warmed milk, egg (beaten), and vegetable oil. Then add this mixture to the dry ingredients. Mix well.
  4. Knead. Until all the flour is incorporated into the crumbles.
  5. Roll the dough between your hands into a ball. Let it rest for 10 minutes.
  6. To make the pretzels. Take chunks of about 1 tablespoon and roll them into 3-inch strips.
  7. Next in a quart saucepan, combine 5 cups of water and 2 tablespoons of baking soda. Cook on high heat until it reaches a boil.
  8. Dip the rolled dough sticks into boiling water for 30 - 45 seconds. They will rise to the top of the water when done. Then, using a slotted spoon, remove and place on your greased or silicone mat-prepared baking sheet.
  9. Place on a greased baking sheet.
  10. Bake for 8 minutes at 450 degrees.
  11. Lastly, brush with butter, and sprinkle with cinnamon and sugar.

  1. Badly described. I thought the baking soda was supposed to be mixed in the dry ingredients until it was too late.

  2. I actually turned these into pretzel bites. So instead of rolling them out to 3 inch strips, I just pulled small pieces, rolled them up, put them in the baking soda water as stated, then baked them for 12 minutes in stead of 8. Brushed with butter and sprinkled with course salt. My toddler loved these with her hot dog lunch. I may have to make extra batch to freeze and make later.

    Oh and I used 1 to 1 gluten free flour…sssssshhhhhh my toddler never noticed the difference lol

  3. The ones I made had great flavor but the texture wasn’t so good.They came out dense and not fluffy like a pretzel. I use some frosting With mine and it was better.

  4. These are actually not bad, just don’t follow the sugar and cinnamon. Just roll your sticks in the cinnamon sugar and they’re pretty good. Also I only stuck them in the oven for 6 minutes and it still came out good, remember you don’t have to follow the recipe word for word. Have fun and play around with it!

  5. This was not good!! It didn’t tell us to use sugar and after following everything these came out not so good
