5-Ingredient Lemon Lavender Popsicles

It is that time of year when I start to think of summertime desserts. Don’t get me wrong, I’m still planning on posting some delicious baked good recipes every other week, but I do look forward to bringing some less caloric options to the blog in the coming months.

Especially ones that are refreshing as well as delicious. These Lemon Lavender Popsicles are a perfect example of a delicious dessert that will stave off hunger while satisfying your sweet tooth. Plus, they’re on a stick. And as we all know, everything on a stick is instantly more delicious.

Cut up fruit in a bowl? Boring. But cut up fruit on a stick, can you say Kabob? SO FUN. But we’re not talking about fruit. We’re talking about 5 simple ingredients.

Ingredients Needed

  • 1/2 cup water
  • 1 cup lemon juice, freshly squeezed
  • 1/4 cup sugar
  • 1/2 cup honey
  • 2 cups water
  • 1 tbsp culinary lavender

How to make These Lemon Lavender Pops

STEP ONE: First, you will want to combine 1/2 cup of water, sugar, honey, and lavender in a small saucepan. Bring all ingredients to a boil. Make sure you are stirring until the sugar dissolves. This will take roughly a minute or so to do.

STEP TWO: Then you can remove the saucepan from the heat. Let the lavender steep and cool down for about 25 minutes.

STEP THREE: Once slightly cooled, pour the liquid contents through a strainer to remove all lavender bits. Now you can add the remaining 2 cups of cold water to strained syrup, mix well, and pour into popsicle molds.

STEP FOUR: Insert sticks and freeze for 6-8 hours (preferably overnight). When ready to eat popsicles, place them under hot water for 10-15 seconds to help loosen the popsicle from the mold.

Unmolding Your Popsicles

The quickest and easiest way to unmold your popsicles is by running the mold under warm water. I just hold the bottoms of the mold under running water, moving it around to evenly warm each mold. It should just take a few seconds to melt long enough to release the pop.

Notes

Use culinary lavender for cooking and baking.

To store wrap each in wax paper and store in a freezer bag.
You can also wrap them in food-safe plastic bags (from craft stores) and store
in ziplock bags.
