And don’t we all love quick weeknight dinner ideas? But you may be questioning the title of this recipe. Chicken cobbler? Typically, when you think of a cobbler you traditionally might think of dessert! This recipe is a savory cobbler similar to a chicken pot pie, but instead, itโs a dump & go, layered recipe that cooks up in one pan.

- 2 cups all-purpose flour
- 1 1/3 cup cheese, shredded
- 1 tablespoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 2 tablespoons parsley
- 1/2 teaspoon pepper
- 1 3/4 cups milk
- 1 egg
- 1 stick + 1/3 cup butter, divided and softened
- 3 cups shredded chicken
- 10.5 oz cream of chicken soup
- 12 oz peas and carrots, frozen

Tips for Success
- What kind of chicken to use: I like to use leftover cooked chicken. You can also purchase a rotisserie chicken from the store to create a quick shortcut.
- Make it in advance: This makes a great meal to prep and serve at a later time. Make both the filling and the biscuit dough and store separately, covered, in the refrigerator for up to three days.
- What size baking dish to use: I prepare this in an 11ร7 inch glass baking dish, but any dish of similar size will work fine. If using ceramic you may need to adjust your cooking time.
- For another shortcut, you can use a frozen bag of mixed veggies instead of fresh in this chicken and biscuits recipe. You can also use prepared store-bought biscuits.
- Use leftover turkey instead of chicken and make it a Turkey Cobbler Casserole. It is a great way to use up leftover turkey from Thanksgiving.
STEP ONE: Preheat the oven to 350ยฐ and add 1 stick of butter to a 13โx9โ baking dish. Remove when butter is melted.
STEP TWO: Next, you are ready to add the flour, cheese, baking powder, and spices to a bowl. Mix well until incorporated. Then set it aside.
STEP THREE: In a different bowl, combine milk, egg, and softened 1/3 cup of butter. Whisk this until it is thoroughly combined.
STEP FOUR: Slowly add the wet ingredients to the dry while whisking it to yield a batter.
STEP FIVE: Next, you can add the chicken, cream of chicken soup, and vegetables to the baking dish and mix.
Itโs important to remember that there is no need to stir the layers together. Just evenly spread out each layer and move on to the next.
STEP SIX: Top with the batter and spread to access the entire dish.
STEP SEVEN: Bake the dish for 45 minutes, then let cool for 15 minutes before serving and eating.
Storage Instructions
Any leftover chicken cobbler can be stored in an airtight container in the fridge for up to a week. Reheat in the microwave or in the oven at 325 degrees just until warmed through, roughly 10-15 minutes. This also freezes really well in an airtight container for up to six months after the casserole has been cooked first.
