What is more refreshing on a hot summer day than Watermelon?  There are several reasons why summer is my favorite season, but I think summer food is on top of the list.

Are you looking for a little twist to your summertime fruit salad? Instead of offering watermelon wedges at your next cookout, branch out with this sweet and savory side dish and make this Watermelon Feta Salad with Mint.

I often just like to eat watermelon with a sprinkle of salt, but I knew that I wanted to take it up a notch. So I did, with some fun and delicious add-ins. This salad could not be any more perfect.  At first, it might seem like an odd combo (watermelon, mint, and feta). If you think about it, you are getting sweet and salty with an injection of fresh lime juice.

I love the combination of feta and watermelon. You can get creative and use goat cheese instead of feta or even substitute fresh peppermint for Cinnamon Basil. The possibilities of creativity and mouth-watery goodness are all at your fingertips.

This colorful salad makes a great addition to any summer cookout. I think I also failed to mention that it is quick and easy to make. The hardest part is cutting that giant watermelon. I have purchased this watermelon cutter which makes this process a lot easier.

Tips for Buying the Perfect Watermelon

  • Give it a TAP – Tap it and try to understand the sound. It is ripe if the sound is deep and almost echoes. Avoid watermelons that sound dull.
  • Pick it up – Try to pick the heavy ones for their size. No matter the size, you want the heaviest of them all.  Big and lighter watermelons are not ripe or sweet enough.
  • Look for the Yellow – Watermelons develop a splotch where they rest on the ground. When this splotch is creamy yellow, it’s ripe.

Recipe Tips

  • If you have a Feta Cheese that you love, use it. The feta cheese in the recipe will make all the difference in taste. If you choose one that is known to be dry and tangy, expect that to show up in this salad. Want a creamery-tasting salad, look for feta cheese made from Greek sheep’s milk. Local or domestic cow’s milk feta tends to be tangy in taste. 
  • Some great additions to this salad: thinly sliced red onion, chopped arugula, or diced cucumber.
  • To Make-Ahead: If you need to make this watermelon salad ahead of time, you can peel and cube the watermelon and cucumber and prepare the remaining ingredients, then store each in the fridge in separate containers. Add the dressing and mix the salad just a few minutes before serving.  

Watermelon Blueberry Feta Salad Recipe

This Watermelon Feta Salad with Mint recipe is hands down a hit anytime I serve it and would be the star of any summer party. It is perfectly red, white, and blue festive for the 4th of July (always adding in some blueberries for a touch of blue), Memorial Day, or Labor Day.  Heck… it’s pretty awesome on a random Tuesday night.

Ingredients needed to make this summer salad

  • 6 cups 1/2 inch by 1/2 inch chilled watermelon (seedless)
  • 1 1/2 limes or lemons, juiced
  • 1/3 cup Feta Cheese, crumbled
  • 15-20 mint leaves, coarsely chopped – roughly 2 tbsps
  • Garnish with blueberries (optional)

How to Make Watermelon Salad

This watermelon salad is full of crumbled feta cheese and mint, all tossed in a fresh lime dressing. A simple yet unusual summer salad that’s sure to get rave reviews.

This watermelon salad doesn’t contain watermelon seeds unless, of course, you purchase one with seeds.

  1. Place watermelon chunks in a large bowl. Add freshly squeezed lime juice.
  2. Next, add chopped mint, and feta cheese. Toss until the watermelon is evenly dressed. Optionally, you can season lightly to taste with salt and pepper. Be careful as feta is naturally salty.
  3. Toss until incorporated. You can transfer it to a nice serving bowl.
  4. Chill for 30 minutes prior to serving.
