What is more refreshing on a hot summer day than Watermelon?  There are several reasons why summer is my favorite season, but I think summer food is on top of the list.

Are you looking for a little twist to your summertime fruit salad? Instead of offering watermelon wedges at your next cookout, branch out with this sweet and savory side dish and make this Watermelon Feta Salad with Mint.

I often just like to eat watermelon with a sprinkle of salt, but I knew that I wanted to take it up a notch. So I did, with some fun and delicious add-ins. This salad could not be any more perfect.  At first, it might seem like an odd combo (watermelon, mint, and feta). If you think about it, you are getting sweet and salty with an injection of fresh lime juice.

This colorful salad makes a great addition to any summer cookout. The hardest part is cutting that giant watermelon. I have purchased this watermelon cutter which makes this process a lot easier.

Ingredients needed

  • 6 cups 1/2 inch by 1/2 inch chilled watermelon (seedless)
  • 1 1/2 limes or lemons, juiced
  • 1/3 cup Feta Cheese, crumbled
  • 15-20 mint leaves, coarsely chopped – roughly 2 tbsps
  • Garnish with blueberries (optional)

Recipe Tips

  • If you have a Feta Cheese that you love, use it. The feta cheese in the recipe will make all the difference in taste. If you choose one that is known to be dry and tangy, expect that to show up in this salad. Want a creamery-tasting salad, look for feta cheese made from Greek sheep’s milk. Local or domestic cow’s milk feta tends to be tangy in taste. 
  • Some great additions to this salad: thinly sliced red onion, chopped arugula, or diced cucumber.
  • To Make-Ahead: If you need to make this watermelon salad ahead of time, you can peel and cube the watermelon and cucumber and prepare the remaining ingredients, then store each in the fridge in separate containers. Add the dressing and mix the salad just a few minutes before serving.  

How to Make Watermelon Salad

STEP ONE: Place watermelon chunks in a large bowl. Add freshly squeezed lime juice.

STEP TWO: Next, add chopped mint, and feta cheese. Toss until the watermelon is evenly dressed. Optionally, you can season lightly to taste with salt and pepper. Be careful as feta is naturally salty.

STEP THREE: Toss until incorporated. You can transfer it to a nice serving bowl. Chill for 30 minutes prior to serving.
